what's in my cookie jar?

After a rough week (sick kiddos, lack of sleep, impeding pile of laundry) you want to make something sweet, but you just need to take the easy way out. You know what I mean? So here is one of my favorite baking shortcuts. Here are my White chocolate cherry cookies, sure to impress. No one will ever know, I promise!

  • 1 egg
  • 1 stick unsalted butter
  • 1 package Betty Crocker sugar cookie mix (the secret)

Here is where the magic happens...
mix-ins
  • 1/4 nuts, i like chopped macadamias
  • 1/4 cup white choc. chips
  • 1/4 cup dried cherries
  • 1/4 shredded coconut

Preheat oven to 375 degrees. Grease cookie sheets. Mix package contents, room temp. butter, and one egg until combined.

Next fold in all your mix-ins.

Use a cookie scoop or for BIG cookies use a ice cream scooper, this way all the cookies turn out the same size (I'm a little OCD that way).

Bake for 12-16 minutes depending on how big you have made them. And you have a delicious little secret that took you all of about 10 minutes to make!! Play around with your mix-ins to get the kind of cookie you love, it's ok!!

Other fave mix ins:

  • 1/4 chopped apricots and slivered almonds, and 1 teaspoon almond extract.
  • Use the peanut butter cookie mix and add 1/2 cup mini Pb cups or chopped Pb cups.
  • Use the chocolate cookie mix and add in chopped Andies mints, 1 teaspoon mint extract.
What is one of your favorite shortcut recipes? Do tell!!
