I just love when I stumble upon a recipe idea that is a total winner. Don't you? Plus it is a really great way to fill up on your greens in a new way. Try it this weekend. I think it would make a lovely lazy weekend lunch dish with friends. I could linger over this one with a crisp glass of wine.</div>

<li class="ingredient">1 (1-pound) piece butternut squash, peeled, seeded, and cut
into 1/2-inch pieces (3 1/2 cups)
<li class="ingredient">3/4 teaspoon salt
<li class="ingredient">1/2 teaspoon black pepper
<li class="ingredient">1 medium onion, finely chopped
<li class="ingredient">4 (1/8-inch-thick) slices pancetta , finely chopped. I keep slices in the freezer to have on hand.
<li class="ingredient">3 garlic cloves, finely chopped
<li class="ingredient">1 bunch kale, stems and center ribs discarded and
leaves coarsely chopped
<li class="ingredient">1 bunch spinach, coarsely chopped
<li class="ingredient">1/4 cup water
<li class="ingredient">7 tablespoons unsalted butter, melted
<li class="ingredient">8 (17- by 12-inch) phyllo sheets, thawed if frozen
<li class="ingredient">1 ounces finely grated Parmigiano-Reggiano (1/2 cup) </li>

Put oven rack in middle position and preheat oven to 425°F.

Heat 2 tablespoons oil in a 12-inch heavy skillet over
moderately high heat until hot but not smoking, then saute squash with 1/4
teaspoon salt and 1/4 teaspoon pepper, stirring frequently, until browned and
just beginning to soften, about 5 minutes. Transfer to a plate and spread in 1
layer to cool. </div>

Add remaining tablespoon oil to skillet and reduce heat to
moderate, then cook onion, pancetta, garlic, and remaining 1/2 teaspoon
salt and 1/4 teaspoon pepper, stirring frequently, until onion is softened,
about 7 minutes. Stir in kale, spinach, and water and cook, covered, stirring
occasionally, until kale is just tender, about 6 minutes. Cool, uncovered, to room
temperature. </div>

This is the time consuming part, but worth it. </div>

Brush springform pan with some of butter. <span class="goog_qs-tidbit goog_qs-tidbit-0">Unroll phyllo and cover stack with
plastic wrap and a dampened kitchen towel.</span> Keeping remaining phyllo
covered and, working quickly, gently fit 1 sheet into pan with ends overhanging
and brush with butter (including overhang). Rotate pan slightly and top with
another sheet (sheets should not align) and brush in same manner. Repeat with 5
more sheets, rotating pan each time so sheets cover entire rim. </div>

Spread half of kale mixture in phyllo shell. Gently stir
together squash and cheese in a bowl and spread evenly over kale mixture. Top with
remaining kale mixture. </div>

Put remaining sheet of phyllo on a work surface and brush
with butter. Fold in half crosswise and butter again. Fold again (to quarter)
and brush with butter, then lay over center of filling. To put it simply you end up with a square. Bring edges of phyllo up
over filling and square to enclose. Brush top with butter
and bake until deep golden brown, 20 to 25 minutes. Cool pie in pan on a rack 5
minutes. Remove side of pan and transfer to a platter. Cut into wedges. </div>

We paired it with a shaved brussel salad topped with chopped pecans, raisins that were plumped in vinegar and orange zest on the stove, orange segments, and a drizzle of organic rasberry vinegarette.</div>

I can honestly say I am so happy to be back in a routine. 1 large seedless watermelon (about 8lbs), peeled and cut into chunks</div>
<div style="text-align: justify;">
1 cup freshly squeezed lime juice (about 10 limes)</div>

1 cup local honey</div>

1 1/2 inch piece of ginger root, grated finely</div>

Ice cubes</div>

Lime slices and mint for garnish</div>

In a blender or food processor, working in batches, process watermelon until smooth. Pour through a strainer (i used cheese cloth) into a large pitcher. You should have about 8 cups of juice. Happy Monday Friends. I hope your weekend was filled with joy, fun, and love. Mine certainly was. Filled with family time and some amazing friends. I do have to gush a little about my husband who is amazing. He built us a barn door system in one day (3 hours) to fit our den. He is the best., I am a lucky girl. It looks amazing and was not very costly to put up! It hangs on plumbing pipe and rolls on caster wheels. Who knew!? Traditional "barn door" kits cost around $500 and way up. This was only $150. And we now have a private space to offer guests in our rater <strike>small</strike> cozy home, without losing the open flow of the room. I love it.</div>

As a mom I find it important to find the party in every day. I like to use it to teach my girls something new about our world. And often enough we can make a party with what we have on hand at home. And with much rain over our weekend, it was an indoor kind of day. We celebrated the upcoming Kentucky Derby. My girls love horses. I had their attention. And loved every moment. We kept the menu light and kid friendly. And yes there is a <a href="http://www.southernliving.com/food/entertaining/kentucky-derby-party-checklist-00417000072688/" target="_blank"><span style="color: #bf9000;">Classic Mint Julip</span></a> in that cup for Mr. and I. of course. We created a derby inspired centerpiece by incorporating a flat of wheat grass placed in a basket. Topped with a mini (homemade) felt flag and horses from the toy box. <br />

It is Monday. This is not a traditional post around these parts...Being honest in this little space helps me to keep myself honest. Before I move on for the week, there is something I need to get off my chest. For quite some time I have been holding myself back in the way of "more".<br />
<br />

I constantly feel like if I only had or did more then things would be easier, lighter, dreams realized...and so on. I have been overwhelming myself with to do's, making to many mental notes, and hoping too much. I have finally had it and have decided to give myself a break.</div>
<br />
I am going to go back to focusing on what makes me and my family happy and at ease. No "more". I am scaling back working and getting back to being creative (my happy maker), blogging, crafting, cooking, mama-ing, wife-ing (not that I ever stopped!) and hopefully more time to take <a href="http://www.shopdandeliongoods.com/" target="_blank"><span style="color: #bf9000;">dandelion goods</span></a> more seriously.<br />

I have come to the realization that the quest of doing "more" and wanting "more" is too much for me. The only "more" that I will hold on to is for one more baby. When the time is right of course. Unfortunately the time is not now. But more babies is always good in my opinion. And I will daily remind myself that I am just shy of thirty and I have plenty of time for "more" later on. Exhale.<br />

Soon enough I had to make them myself. It is kind of embarrassing how often I make these now. So I'll spare ya the details.... And She made me more inclined to try out Instagram. I had no idea what I was missing....</div>

I Love holiday cooking/baking. I you have followed along for a while you may know that already :). This is what our trunk looked like last Easter on the way to celebrate with family. This year we will have cinnamon rolls from a <a href="http://www.amazon.com/Fried-Chicken-Champagne-Lisa-Dupar/dp/0692010815" target="_blank"><span style="color: #f1c232;">new cookbook</span></a> (I'll let you know how they turn out), coffee cake (<a href="http://www.domestic-dish.com/2011/04/inspiration-with-side-of-coffee-cake.html"><span style="color: #f1c232;">Based on this recipe</span></a>), and something sweet. We find it important to focus on what she CAN have and CAN do on a daily basis in an effort to not discourage her. She may only be two, but she is wise beyond her years and knows that she is allowed different than others. This can be particularly hard for an egg allergy child during this month filled with talks of egg dying and egg hunts. She is a little confused after being told to stay away from eggs. The enemy. We have opted to call them "bunny hunts" and "Easter art". It just makes more sense for now.</div>

The safe eggs. Styrofoam, paper mache, and wood. Glitter, lots of glue, sequins, yarn, ribbon, we had it all. And it was a glitter/glue fun mess. The kids took turns painting glue on their eggs, shaking them in cups of colorful glitter, and then decorating.</div>

Preheat oven to 350 degrees Place 12 paper liners in a muffin pan. In bowl with an electric mixer, cream butter and sugar until light and fluffy. About 5 minutes. With the mixer on low add the banana, vanilla, sour cream, and milk. Turn mixer to lowest speed and add the flower, oats, baking powder, baking soda, and salt. Beat until just mixed. Scoop batter using and ice cream scoop into prepared muffin pan. Bake for 30 minutes until the tops are brown and a cake tester (aka: toothpick) comes out clean. Brush tops of muffins with maple syrup and a sprinkle of uncooked oats. Mostly because it looks pretty and it give the eater an idea of what they are about to consume.</div>

<em>The budget.</em> If you are a fellow Joe's junkie, chances are that you have spyed this sweet deal before. It's only $4.99. I will say that this is on the sweet side. It is perfect for entertaining and making champagne cocktails because the sweetness it cut with <a href="http://en.wikipedia.org/wiki/Bitters"><span style="color: #f1c232;">bitters</span></a>. My favorite being blood orange bitters found at Bevmo. I haven't been able to find a better value champagne. Stock up because Tj's runs out. Seriously.</div>

<em>The mid</em>. <a href="http://www.bevmo.com/Shop/ProductDetail.aspx?utm_source=froogle&utm_medium=cpc&utm_campaign=froogle&ProductID=15806"><span style="color: #f1c232;">Mumm Napa Cuvée</span></a> : I usually pick this up at bevmo. I don't like dry bubbly. This is crisp, refreshing and slightly sweet. It is hands down my favorite .... It is not the cheapest nor is it the most expensive, but it consistently delivers the best taste and value. I suppose I sound very serious about my champagne? It is important stuff, you never know when you need to celebrate! At $15-20 a bottle, we always have one in the fridge.</div>

Place a little loose on a small plate. Wipe 1 cherry along the rim of a chilled 6-ounce flute, then turn the glass over and dip the rim in the sugar. Put the sugar cubes in the glass and the bitters, brandy, and 3 remaining cherries, each with a dash of the syrup they're packed in. Top slowly with bubbly and stir gently.</div>

Between my lovely sisters birthday, and the task of transforming the girls room from little girl beds to one big girl bunk bed. We did it all. Annnnnd I just managed to put together Ella's school valentines while watching Dowton Abbey all night.... 1 big bunch Kale, Stems removed and leaves torn roughly (they shrink down quite a bit)<br />
2 tablespoons olive oil<br />
<a href="http://www.domestic-dish.com/2012/02/chips-two-ways-house-seasoning.html">Seasoning</a>, to taste<br />
<br />
Preheat oven to 400 degrees F. Toss kale with olive oil and seasoning on a baking sheet or two, make sure they don't overlap. Bake for 12-14 minutes until crisp. Cool and chip trip!<br />

3-4 Potatoes, sliced thinly on a mandolin<br />
4 Cups vegetable oil<br />

Heat oil in a medium pot over high heat. Slice potatoes on a mandolin. I use<a href="http://www.amazon.com/OXO-Grips-V-Blade-Mandoline-Slicer/dp/B001THGPDO/ref=sr_1_1?ie=UTF8&qid=1328309077&sr=8-1"> this one</a>. It comes in really handy and is a reasonably priced one. Working in batches place a handful of potatoes into hot oil. be careful not to crowd oil or it will cool down too much. Cook until crisp and browned. Lay on paper towels and sprinkle with seasoning.<br />

In my family we like chips. We have been known to throw parties that revolve around chips. A chip and dip party to be precise. Or on vacation when eating to many chips, we call it a "chip trip". Homemade chips are great as long as you get the seasoning right. This little jar is my favorite homemade chip seasoning: 1 part kosher salt / 1 part garlic powder / 1 part smoked paprika ....... the color and sweet smokiness that the smoked paprika lends really makes this seasoning so good. It work really well on fish, in fish fry batter, pork and in rice. In light of super bowl this weekend I thought that I would encourage you to try this seasoning if you want to enjoy a healthier "chip trip" :)</div>

The rice krispy treat cake was perfect for a morning party, fit with the pajama theme and it was a great way to deal with that fact that Olivia is allergic to eggs and nuts. Tricky when it comes to birthdays because you cant just go out to a bakery and order up something. It is just not safe for her. I will definately make it again. So easy. All you have to do is form your krispy mixture into the cake pans of your choice!</div>

All the time<em> </em>I spend obsessing of the details of their and any party for that matter, is just my kind of thing. And even though my girls wont remember how well I stuck to a "theme", or how long I spent glittering the party hats, the smile on all the kids faces make it worth it. Especially my two special girls.....exhale...all the birthday party planning is over until next year....I guess I should start on Valentines Day <3</div>

Plain old original party hats are great. Classic. But when it comes to the birthday party for my both my girls, I want more. I need more. Plus I am always up for a craft! I sat in my garage while one girlie slept and the other was away learning, just staring at the party hats.</div>

All I did was Spray one side (the right to be specific) lightly with craft adhesive spray. It is the next best thing to gold spray paint if you ask me. Then I sprinkled the entire tacky area with paper confetti and glitter confetti so that one side had a little flair. Next I sprayed the spot I wanted to stick the feathers, put them on, and continued to make 20 more. Not to bad. </div>
