What's in my cookie jar?

Look at that sad cookie jar. It was empty and begging to be filled. I was trying to think of something I hadn't mad in a while. Between breakfast, various tantrums, and me trying to down coffee, it came to me BLONDIES. Why not? Blonds have more fun anyway, at least I think so! This is a super easy and adaptable recipe that will produce oooey gooey hot blondies in around 30 minutes!

Chocolate Chunk Blondies
(makes 12 small/8 large depending on who is doing the cutting)

8 tablespoons butter, melted
1 cup packed brown sugar
1 egg
1 teaspoon good vanilla

Pinch salt (plus extra to throw over your shoulder if you're into that :) )
1 cup all-purpose flour

  1. Butter an 8×8 pan
  2. Mix melted butter with brown sugar – beat until smooth. Beat in egg and then vanilla.
  3. Add salt, stir in flour. Mix in any additions (I used chunked up chocolate).
  4. Pour into prepared pan. Bake at 350°F 20-25 minutes, or until set in the middle. Cool on rack before cutting them.
Other variations:
  • 1/2 to 1 cup chopped nuts, toasting them first for even better flavor
  • 1/2 to 1 cup chocolate chips
  • Swirl a few tablespoons of nutella into the batter when its in the pan
  • 1/2 cup mashed bananas
  • 2 tablespoons of espresso powder with the vanilla
  • Stir 1/2 cup dried fruit, dried cherries would be great 
  • Top with a vanilla butter cream or chocolate peanut butter cream frosting

mmmmmmm. now these... maybe not as guilt-free, but I can just tell that they're totally worth it. Right??
